Motard conversion

I would start by moving somewhere in the lower hemisphere, so at least your bike will be rightside up. I think if you put an 18 on the front it would probably have to be custom, and your tire selection wouldn't be super great. That's pretty much the only reason to use 17s

He is right 18" rims really narrow your rubber selection to a small window, and at the same time is cheaper than a complete conversion. 18" compared to a 21" front wheel is going make it easier in the twists cause less rolling mass and gyro effect be lessened. But really it comes down to what you want and how you want to modify "Your" bike. Just keep in mind the spoke count of your factory hub.
