Coolant smells like burnt honey

So I bought a bike at a police auction for $500 2011 WR250F, practically brand new when they picked it up it looked like but it was definitely ridden hard given the circumstances lol. My problem is it pops at low idle and wants to stall... not main issue, that just needs carb adjustment. I've drained the coolant and replaced but it smells like burnt honey or something and I'm wondering if a gasket has gone allowing oil into coolant. There's no coolant in oil and it's not milky, but when I full the resourve it seems to disappear within a few days...i don't see any leaks in the line but who knows, looking for some help on where to start please
