110 100 18 or 120 100 18 for 2017 fe501? Store recommend 110, I think too small? Any opinions?

Wider = better traction but climbs in ruts more, better rim protection when low PSI is used and Longer tire wear.

120 is a ratio number, not a 'size'

Go to tire companies website to see the actual size of the tire.

Some measure carcass, some overall width.

Traction is about contact patch and friction, not size.

If you ride in soft terrain mostly, you want a HARD compound tire, that is very wide.

If you ride in hard or rocky terrain mostly, you want a SOFTER compound tire, that is as wide as you can stand.....as the wider it gets, the less turning feel you have.

A Kenda Millville-2 110/18 will have better 'traction' than a Maxxis Desert 120-18, because the Maxxis has a thick carcass that does not flex, and cheap rubber compounds.

You can run lower air pressure using a HD tire like the Maxxis to get a large contact patch, but you must have 4mil tubes or Tubliss to go low enough to be effective.... and not get a flat.
