Jack knife sofa / sofa sleeper bed for Moto van

We bought one from a custom van builder for one of our vans. An issue was no anchors for the seat belts which may not be an issue for you. Then on another we had a carpenter make us a bed out of plywood with "piano" hinges that let it be used as a sofa or a bed. Just slid it flat when a bed was needed. Covered it with 4 inch foam and very light carpet. Had lots of storage under it. That was by far the best combo but still no seat belts.

I want to put a water tank under the rear seat/bed

In that case I would build one from plywood to the height you need. Should be an easy task for anyone with basic woodworking skills. Very basic, good luck.
