Stripped oil filter cap threads

Usually, the only way to fix those is to replace the damaged part.Few have access, ability or funds to rebuild damaged threads (weld, machine and recut) and find the soultion is to replace and be more careful in the future.

Are you talking about the threads that the 5mm bolt(s) screw into? If so, the short answer is a helicoil. Make sure there's enough wall material. Another option is to carefully pre-drill it with 5mm drill (tap drill size for 6mm bolt), tap with a 6mm x1mm pitch bottoming tap, and use a 6mm bolt. In either case do not drill thru! Then be sure to use a torque wrench to tighten the bolts to spec.

You'll have to determine that yourself.  There should be enough sidewall. Going to a 6mm bolt will only make the threaded hole approximately .040" larger. Going with a Helicoil, approximately .060"/.070" larger.
