what shims size do i put in my YFZ450 2005

If that engine is anything like the motocross version, 

taking measurements with current ones will determine which size are required to obtain the correct lash.

 

If the valves have closed up to point there is zero lash (they are probably toast and the cylinder head also needs attention...)

but nevertheless you could carefully sand the shims down until correct lash is reached, 

measure each shim / noting their positions and, replace them with a new ones of the closest thickness.
