Setting valve clearances after new valves and springs

I am getting pretty close to doing my own valves. Planning on ordering the RHC kit thus far. My question is after I get my head back from my machine shop after the valve job how do I get the clearances set with the new valves? Do I just put the old shims in and measure clearances and use that as the guidelines for what shims I need? What method are you guys using to get back up and going after the valve/spring replacement?

I would purchase a smaller shim and use it to find the shim you need. More than likely the stock shims will be too tight and you will not be able to determine which shims to buy. Maybe buy a 140 shim and use it as a guide
