I'm lookin at getting a cheap 2 stroke and learning some things on fixing it. I wanted some opinions on what I should look for. For instance, I have found a kx 125 for $200 that needs rebuilt and I also found a kx 125 for $500 that just needs piston and rings. Any thoughts and suggestions are helpful.

what years are the two bikes?

I believe somewhere early 90s

anything of those years may need more than just a piston, so take a good look at just how much you intend to spend, as old 125's can cost a bunch of money you'll never get back, much like used 250f's. take your time and look around

look for worn suspension( either springy or lots of play ) chain n sprockets, check to make sure gearbox still works, crank is still good. If your heart tells you its too far gone, dont let seller convince you otherwise
